Lentil Soup
__Ingredients:__
- 1/2 cup dry lentils (175 kcal)
- 1 carrot, diced (25 kcal)
- 1 celery stalk, diced (10 kcal)
- 1/2 onion, diced (20 kcal)
- 2 cups vegetable broth (20 kcal)
- 1 slice whole grain bread (80 kcal)
- 1 tsp olive oil (40 kcal)
- Salt, pepper, and herbs to taste
__Calories:__ ~370 kcal.
__Macronutrients__: protein: ~19 g, fat: ~8 g, carbs: ~55 g.
__Instructions:__
1. In a pot, heat the olive oil over a medium heat. Add the diced onion, carrot, and celery, and sauté until softened.
2. Add the dry lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until lentils are tender.
3. Season the soup with salt, pepper, and herbs to taste. Serve with a slice of whole grain bread on the side.
