Asian-style roast beef noodles

__Ingredients__: - Beef 4 oz. - Soy sauce 1 tbsp. - Ginger 1 tsp. - Red onion 1 pc - Rice noodles 1/2 cup - Sweet pepper 1/4 cup - Carrots 1/4 cup - Broccoli 1/2 cup - Soy sauce 1 tbsp. - Ginger 1 tsp. - Garlic 1 tbsp. - Olive oil 1 tsp. __Macronutrients__: - Protein: ~35 g - Fat: ~20 g - Carbs: ~74 g - Calories: ~604 __Instructions__: - In a small bowl, mix together the soy sauce and grated ginger. Dice the onion and add to the mixture. Marinate the roast beef in this mixture for at least 30 minutes. - Sear the beef on all sides for 10 minutes. Preheat the oven to 160°C (320°F). Bake the meat for about 30-35 minutes for medium rare or longer, depending on your preference. - Prepare the rice noodles according to the instructions on the packaging. - Chop the bell peppers and carrots into thin strips and the broccoli into florets. Heat the olive oil in a frying pan and fry the garlic and ginger for 1 minute. - Add the vegetables and stir-fry for 5 minutes until slightly crispy. Add the sliced roast beef and cook for another 2 minutes. - Add the noodles, pour in the soy sauce, stir and heat through for 1-2 minutes.
