Portuguese style chicken with vegetables and bulgur
__Ingredients:__
- Chicken breast 4 oz.
- Chili pepper 1/2 tsp.
- Tomato paste 1 tbsp.
- Lemon juice 2 tsp.
- Apple cider vinegar 1 tsp.
- Smoked paprika 1/2 tsp.
- Bulgur 1/3 cup
- Sweet peppers 1/4 cup
- Broccoli 1/2 cup
- Carrots 1/4 cup
- Olive oil 1 tsp.
- Salt, pepper to taste

__Instructions:__
1. Mix together the tomato paste, lemon juice, vinegar, smoked paprika, and chili pepper. Marinate the chicken breast in this mixture for 30 minutes before baking.
2. Boil the bulgur in salted water according to the directions on the package.
3. Slice the sweet peppers and carrots, and divide the broccoli into small florets. Place the marinated chicken breast and vegetables on a baking tray, drizzle with olive oil, and season with salt and pepper.
4. Bake at 180 °C (350 °F) for around 30 minutes until cooked through. Serve the chicken with the bulgur and roasted vegetables.
