Baked cod with vegetables
__Ingredients__:
- Cod fillets 5 oz.
- Quinoa 1/3 cup
- Sweet peppers 1/2 cup
- Carrots 1/2 cup
- Broccoli 1 cup
- Olive oil 2 tbsp.
- Lemon juice 1 tbsp.
- Salt, pepper to taste

- Calories: ~479 kcal
__Instructions__:
- Cook the quinoa according to the directions on the packaging (about 15 minutes).
- Slice the sweet peppers into strips and the carrots into bars. Separate the broccoli into florets.
- Place the vegetables on a baking tray, drizzle with 5 ml of olive oil, sprinkle with salt, pepper, and paprika.
- Bake in a preheated oven at 200°C (400°F) for 15-20 minutes until the vegetables are soft and lightly browned.
- Season the cod fillets with salt, pepper, a splash of lemon juice, and the remaining oil. Bake alongside the vegetables or on a separate baking sheet for 15 minutes.
- Layer a serving of quinoa, baked vegetables, and cod on a plate.
