Chicken breast with quinoa and vegetables
__Ingredients:__
- Chicken breast 5 oz.
- Quinoa 1/4 cup
- Zucchini 1/2 cup
- Sweet pepper 1/3 cup
- Broccoli 1 cup
- Olive oil 1 tsp.
- Italian spices 2 tsp.
- Salt, pepper to taste

__Instructions:__
1. Boil quinoa in salted water (around 10-15 minutes).
2. Grill the chicken filets for 5-7 minutes on each side until cooked through.
3. Preheat the oven to 180 °C (350 °F). Cut the vegetables into large pieces, arrange in a baking dish and add the spices and olive oil. Bake for 30 minutes.
4. Serve the chicken with quinoa and vegetables.
