Shakshuka
__Ingredients:__
- 2 eggs
- Sweet peppers 1/4 cup
- Tomatoes 1/4 cup
- Canned corn 1/4 cup
- Spinach 1/3 cup
- Olive oil 1 tsp
- Whole wheat bread 2 oz
- Italian spices 1 tsp
- Salt, pepper to taste

__Instructions:__
1. Heat olive oil in a pan.
2. Sauté the chopped bell pepper for 3-4 minutes until softened. Add chopped tomatoes and Italian spices, and simmer for 5-7 minutes until the sauce thickens. Add spinach and cook until it wilts.
3. Make wells in the vegetables and crack the eggs into them. Cover with a lid and cook for 5-7 minutes.
4. Add corn and serve with whole wheat bread.
