Chicken curry
__Ingredients:__
- Chicken filet 5 oz.
- Canned chickpeas 1/4 cup
- Coconut milk 1/4 cup
- Carrots 1/3 cup
- Onion 1/2 pc
- Sweet pepper 1/2 pc
- Curry 1 tbsp.
- Turmeric 1/2 tbsp.
- Olive oil 1 tbsp.
- Basmati rice 1/4 cup
- Salt, pepper to taste

Protein: ~24 g
Fat: ~44 g
Carbs: ~66 g
Calories: ~670 kcal
__Instructions:__
- Cook the rice according to the instructions on the packaging.
- Cut the chicken filets into small pieces and fry for 5-7 minutes until golden in a deep frying pan.
- Dice the carrots and sweet peppers, and finely chop the onion.
- Add the onions to the chicken and fry for 3 minutes. Then add the potatoes and carrots, and cook for another 5 minutes.
- Add the curry and turmeric, and stir to evenly distribute the spices. Pour in the coconut milk, turn down the heat, cover and simmer for 15-20 minutes until the vegetables are soft.
- Add the chickpeas and sweet peppers and stew for another 5 minutes.
- Serve the cooked curry over a bed of rice.
