Indian chutney with eggs and toast
__Ingredients:__
- Egg 2 pcs
- Whole wheat bread 2 oz.
- Tomatoes 1/4 cup
- Sweet peppers 1/4 cup
- Cilantro (fresh) 1 tbsp.
- Garlic 1 pc
- Chili pepper 1/4 tbsp.
- Ginger 1/2 tbsp.
- Lime 1/4 pc
- Olive oil 1 tbsp.
- Salt to taste

__Instructions:__
- Toast the bread on a dry frying pan or in a toaster.
- Heat the olive oil in a frying pan, and add garlic, grated ginger, salt, and chili pepper. Fry for a minute to allow the spices to release their flavor. Chop the tomatoes and sweet peppers into small pieces and add them to the skillet. Stir, cover, and simmer for 5 minutes until the vegetables are soft and the sauce is smooth.
- Make indentations in the sauce with a spoon and gently scramble an egg into each one. Cover with a lid and cook for 3-4 minutes.
- Serve with the toasted whole wheat bread and sprinkle with fresh cilantro.
