Green puree soup
__Ingredients:__
- Broccoli 1 cup
- Potatoes 1/2 cup
- Green peas (frozen) 1/4 cup
- Onion 1/4 pc
- Garlic 1 pc
- Olive oil 1 tsp.
- Fresh thyme 2 sprigs
- Whole wheat bread 2 oz.
- Salt, pepper to taste

- Carbs: ~60 g
__Calories:__ ~384 kcal
__Instructions:__
- Dice the potatoes and onions, divide the broccoli into florets, and defrost the green peas.
- Heat the olive oil in a saucepan, then fry the onion and garlic until soft (2-3 minutes). Add the sliced potatoes and thyme sprigs and fry for a further 1 minute. Pour in 300 ml of water and bring to the boil. Put in the broccoli and cook over a low heat for 7-8 minutes until the vegetables are soft. Add the green peas 3 minutes before the end.
- Remove the thyme sprigs from the pot and use a blender to mix the soup until smooth. Season with salt and pepper if necessary.
- Serve the soup with whole wheat bread.
