Cod with potatoes and green vegetables
__Ingredients:__
- Cod (fillet) 5 oz.
- Basmati rice 1/4 cup
- Broccoli 1/4 cup
- Carrots 1/2 cup
- Zucchini 1/4 cup
- Onion 1 oz.
- Olive oil 1 tsp.
- Lemon juice 1 tsp.
- Salt, pepper to taste

- Fat: ~12 g
- Carbs: ~51 g
__Calories:__ ~441 kcal
__Instructions:__
1. Grate half a carrot using a coarse grater. Place the cod in a baking dish and add salt and pepper to taste. Cover the fish with the grated carrot, making sure the fish is fully covered. Bake the cod in the oven at 350 °F (180 °C) for around 20 minutes.
2. Prepare the rice according to the instructions on the packaging.
3. Serve the fish with the rice and previously prepared vegetables.
