Toast with roasted peppers, ricotta, and fried egg
__Ingredients:__
Egg 2 pcs
Sweet peppers 1/4 cup.
Ricotta (5 %) 1 oz.
Whole wheat bread 2 oz.
Olive oil 1 tsp.
Salt, pepper to taste

__Instructions:__
- Preheat the oven to 200 °C (390 °F).
- Cut the peppers in half and remove the seeds. Place the peppers skin side up on a baking tray and drizzle with olive oil. Bake for 15-20 minutes until the skins begin to blacken.
- Place the peppers in a bag or cover with clingfilm to steam, then remove the skins. Cut into strips.
- Fry the egg in a heated frying pan with a little oil.
- Toast the bread lightly and spread on the ricotta. Top with the roasted peppers and fried egg.
