Warm salad with pumpkin and spicy chickpeas
__Ingredients:__
- Pumpkin 1 cup
- Arugula 1 cup
- Canned chickpeas 1/8 cup
- Cinnamon 1/2 tsp.
- Ground ginger 1/4 tsp.
- Honey 1/2 tsp.
- Olive oil 2 tsp.
- Salt, pepper to taste

__Instructions:__
1. Dice the pumpkin into cubes and roast in the oven at 350 °F (180 °C) for 20–25 minutes until soft. Roast two portions of pumpkin at once so you can use half the next day.
2. Place the chickpeas in a baking dish, add the cinnamon, ginger, honey, and olive oil. Mix well and bake at 350 °F (180 °C) for 15 minutes, until golden and crispy.
3. Tear the arugula leaves and top them with the roasted pumpkin and spiced chickpeas. Drizzle with additional olive oil if needed.
