Salad with tuna and baked potatoes
__Ingredients:__
- Potatoes 6 oz.
- Tuna in its own juices 5 oz.
- Arugula 1 cup
- Cherry tomatoes 1/2 cup
- Cucumbers 1/4 cup
- Olives 1/4 cup
- Egg 1 pc
- Red onion 1/2 pc
- Olive oil 2 tsp.
- Lemon juice 1 tsp.
- Parsley 1 tbsp.
- Salt, pepper to taste

__Instructions:__
1. Cut the potatoes into cubes and bake in the oven at 180 °C (350 °F) until soft, about 25–30 minutes.
2. Hard-boil an egg.
3. In a bowl, mix the arugula, chopped cherry tomatoes, cucumber, and red onion.
4. Slice the boiled egg and add it along with the tuna, olives, and roasted potatoes.
5. Drizzle the salad with olive oil and lemon juice, then sprinkle with oregano and parsley.
6. Toss everything together and serve immediately.
