Fish in orange-ginger marinade with vegetables and rice
__Ingredients:__
- White fish fillets (e. g. cod) 5 oz.
- Orange juice 2 tbsp.
- Orange zest 1/2 tsp.
- Ginger 1 tsp.
- Soy sauce 2 tsp.
- Honey 1 tsp.
- Broccoli 1/4 cup
- Cauliflower 1/4 cup
- Carrots 1/4 cup
- Olive oil 1 tsp.
- Basmati rice 1/3 cup
- Salt, pepper to taste

__Instructions:__
1. Mix the orange juice, zest, grated ginger, soy sauce, and honey. Marinate the fish in this mixture for 10-15 minutes.
2. Place the fish on a baking tray and bake at 180 °C (350 °F) for about 15 minutes.
3. Slice the carrots, cauliflower, and broccoli. Bake them with olive oil in the oven on the same baking tray or a separate tray for around 15 minutes.
4. Cook the basmati rice in salted water according to the instructions on the package.
5. Serve the fish with the baked vegetables and rice.
