Chicken with vegetable ragout
__Ingredients:__
- Chicken breast 5 oz.
- Paprika 1 tbsp.
- Уams 1 cup
- Olive oil 1 tbsp.
- Eggplant 1/3 cup
- Zucchini 1/3 cup
- Sweet peppers 1/3 cup
- Tomatoes 1/2 cup
- Garlic 1 pc
- Italian herbs to taste
- Olive oil 1 tbsp.
- Salt, pepper to taste

__Instructions:__
- Preheat the oven to 375 °F (190 °C).
- Rub the chicken filets with salt, pepper, and paprika, then brush with half of the olive oil. Bake for 20-25 minutes until fully cooked.
- Peel the yams and cut into large cubes. Slice the peppers, zucchini, eggplant, and tomatoes, and mince the garlic.
- Heat the olive oil in a skillet. Add the garlic and fry until fragrant (about 30 seconds). Add the vegetables and braise over a medium heat for 15 minutes until soft.
- Sprinkle with Italian herbs, salt, and pepper to taste.
