Chicken breast in pesto sauce with quinoa and vegetables
__Ingredients:__
- Chicken breast 5 oz.
- Pesto sauce 2 tsp.
- Quinoa 1/3 cup
- Broccoli 1/4 cup
- Carrots 1/4 cup
- Zucchini 1/4 cup
- Onion 1 oz.
- Olive oil 1 tsp.
- Salt, pepper to taste

__Instructions:__
1. Rub the chicken breast with pesto sauce and let it marinate for 30 minutes to 2 hours.
2. Bake the chicken breast in the oven at 350 °F (180 °C) for around 20–25 minutes.
3. Add 2/3 of a cup of water to the quinoa and cook for 12–15 minutes until done.
4. Heat the olive oil in a skillet, and sauté the chopped broccoli, carrots, zucchini, and onion until soft (about 5–7 minutes). Add salt and pepper to taste. Make 2 portions of vegetables and save one for dinner.
5. Serve the chicken with quinoa and sautéed vegetables.
