Frittata with vegetables
__Ingredients:__
- Egg 2 pcs
- Sweet potato 1/4 cup
- Zucchini 1/4 cup
- Cauliflower 1/4 cup
- Canned corn 1/8 cup
- Milk 1 % 1/4 cup
- Olive oil 1 tsp.
- Whole wheat bread 1 oz.
- Salt, pepper to taste

__Calories:__ ~399 kcal
__Instructions:__
1. Heat the olive oil in a frying pan and fry the sliced sweet potato and cauliflower until soft (about 5 minutes).
2. Add the zucchini and cook for another 3 minutes.
3. Whisk the eggs and milk with salt and pepper and pour the mixture over the vegetables. Cook the frittata over a low heat until tender (about 5 minutes) or under the grill in the oven.
4. Just before serving, top with the corn and bread.
