Salmon with Quinoa and Steamed Vegetables
__Ingredients:__
- 120g baked salmon – 230 kcal
- ½ cup cooked quinoa (90g) – 110 kcal
- 1 cup steamed broccoli (150g) – 55 kcal
- 1 tsp olive oil (5ml) – 40 kcal

__Instructions:__
1. Rinse ½ cup quinoa under cold water. In a small pot, combine quinoa with 1 cup of water. Bring to a boil over medium-high heat, then reduce to a simmer and cover. Cook for 15 minutes or until the water is absorbed and the quinoa is tender.
3. Preheat your oven to 400°F (200°C). Place the salmon fillet on a baking sheet lined with parchment paper or foil. Drizzle 1 tsp olive oil over the salmon and season with salt and pepper. Bake the salmon for about 12-15 minutes.
4. While the salmon is baking, bring a pot of water to a boil and place a steamer basket over it. Add 1 cup of broccoli to the steamer basket, cover and steam for about 5-7 minutes, until the vegetables are tender but still crisp. Season with a pinch of salt or a squeeze of lemon juice if desired.
5. Serve the baked salmon with a side of quinoa and steamed vegetables.
