Hashbrowns with fresh vegetables
__Ingredients:__
- Potatoes 1 cup
- Zucchini 1/2 cup
- Egg 1 pc
- Olive oil 2 tsp.
- Cucumber 1/4 cup
- Sweet pepper 1/4 cup
- Spinach 1/2 cup
- Cherry tomatoes 1/4 cup
- Honey 1 tsp.
- Salt to taste

__Calories:__ ~372 kcal
__Instructions:__
1. Mix the grated potatoes and zucchini with the egg, salt and pepper.
2. Heat a frying pan with 1 tsp of olive oil, form the potato mixture into tortillas, and fry for 4-5 minutes on each side until golden.
3. Slice the cucumber and sweet peppers and add the spinach. Make a dressing of olive oil, lemon juice, and honey.
4. Serve the hashbrowns with the fresh salad.
