Black rice with salmon and vegetables
__Ingredients:__
- Salmon fillet 5 oz.
- Black rice 1/3 cup
- Broccoli 1 cup
- Sweet peppers 1/3 cup
- Zucchini 1/4 cup
- Carrots 1/4 cup
- Olive oil 1 tbsp.
- Lemon juice 1 tbsp.
- Salt, pepper to taste

__Instructions:__
- Cook the black rice in salted water according to the directions on the packaging (about 30 minutes).
- Slice the broccoli, zucchini, carrots, and peppers, and saute in 1 tbsp of olive oil until soft (5-7 minutes).
- Bake the salmon in the oven at 180°C (350°F) for 12-15 minutes, splashing with lemon juice and sprinkling with salt and pepper.
