Stir-Fried Tofu with a Variety of Vegetables and a Side of Brown Rice
__Ingredients:__
- 1 cup firm tofu, cubed (175 kcal)
- 1 cup mixed vegetables (bell peppers, carrots, broccoli) (50 kcal)
- 1 tbsp soy sauce (10 kcal)
- 1 tsp sesame oil (40 kcal)
- 2/3 cup cooked brown rice (150 kcal)
__Calories:__ ~425 kcal.
__Macronutrients:__ protein: ~22 g, fat: ~15 g, carbs: ~55 g.
__Instructions:__
1. Heat sesame oil in a pan over a medium heat. Add tofu and cook until golden brown.
2. Add mixed vegetables and soy sauce. Stir-fry until vegetables are tender.
3. Serve with a side of cooked brown rice.
