Tomato soup with tuna
__Ingredients:__
- Canned tuna 3 oz.
- Quinoa 1/3 cup
- Tomatoes 1 1/2 cups
- Carrots 1/4 cup
- Onions 1/4 pc
- Garlic 1 pc
- Olive oil 1 tbsp.
- Salt, pepper to taste

__Instructions:__
- Cook the quinoa in salted water according to the directions on the packaging (around 12-15 minutes).
- Chop the onion, carrots, and garlic. Heat the olive oil in a deep pan and fry the vegetables until soft (around 5 minutes).
- Dice the tomatoes and add to the pan. Add 1 cup of water, bring to a boil, and then simmer for 10-12 minutes.
- Allow the soup to cool slightly and blend to a smooth consistency.
- Return the pot to the heat. Add the cooked quinoa and the chopped tuna to the soup. Heat over a low heat for 2 to 3 minutes.
