Chicken Curry with Rice
__Ingredients:__
- 5 oz (140 g) chicken breast, diced (230 kcal)
- 1/2 cup cooked brown rice (110 kcal)
- 1/2 cup coconut milk (90 kcal)
- 1/2 cup diced tomatoes (20 kcal)
- 1/4 cup diced onions (15 kcal)
- 1 tsp curry powder (5 kcal)
- 1 tsp olive oil (40 kcal)
- Garlic and ginger, minced to taste

__Instructions:__
1. In a large pan, heat olive oil over medium heat. Add the diced onions, garlic, and ginger and sauté until fragrant. Add the chicken and cook until browned.
2. Stir in the curry powder, diced tomatoes, and coconut milk. Simmer for 10–15 minutes until the chicken is fully cooked.
3. Plate the chicken curry with a side of cooked brown rice.
