Mexican-style vegetable lasagna
__Ingredients__:
- Ground chicken 3 oz.
- Corn tortilla 2 oz.
- Red beans (canned) 1/4 cup
- Tomatoes in their own juice 1/2 cup
- Sweet peppers 1/2 cup
- Onion 1/2 pc
- Garlic 1 pc
- Cheddar cheese (grated) 3 tbsp.
- Olive oil 1 tsp.
- Paprika 1/2 tsp.
- Oregano 1/2 tsp.
- Optional chili pepper

__Instructions__:
- In a frying pan, fry the onion and garlic with 1 tsp of oil until soft. Add the minced meat and fry for 5 minutes, stirring constantly.
- Add the chopped peppers, tomatoes, and spices and stir-fry for 5-7 minutes. Add the beans and heat through.
- Cut the tortilla into several pieces, sized for the baking dish.
- Place in the baking dish in layers of tortilla, vegetable mixture, and grated cheese (repeat layers 2-3 times).
- Bake at 180 °C (350 °F) for 25 minutes.
