Panzanella salad
__Ingredients__:
- Whole grain bread 2 oz.
- Cherry tomatoes 1 cup
- Cucumber 1/2 cup
- Sweet pepper 1/3 cup
- Red onion 1/4 cup
- Olive oil 1 tsp.
- Lemon juice 1 tsp.
- Dijon mustard 1/4 tsp.
- Basil 1 tsp.
- Garlic 1 pc
- Salt, pepper to taste

__Instructions__:
- Cut the bread into small cubes and dry on a dry frying pan, or in the oven at 180°C (5-7 minutes) to make it crispy.
- Dice the tomatoes, cucumber, bell pepper, and the red onion into thin rings.
- Leave the basil leaves whole or tear them with your hands.
- Mix together the olive oil, lemon juice, Dijon mustard, salt, and pepper. In a bowl, combine the vegetables, breadcrumbs, and basil. Pour over the dressing and stir to combine.
- Let the salad stand for 5-10 minutes.
