Quinoa with mango and lightly salted salmon
__Ingredients__:
- Quinoa 1/4 cup
- Lightly salted salmon 2 oz.
- Mango 1/4 cup
- Spinach 1/2 cup
- Greek or natural (3%) yogurt 1 tbsp.
- Lemon juice 1 tbsp.
- Olive oil 1 tbsp.

- Fat: ~17 g
- Carbs: ~37 g
- Calories: ~402
__Instructions__:
- Boil the quinoa in salted water until tender according to the directions on the packaging (about 15 minutes).
- Cut the mango into small cubes and the salmon into thin slices.
- Mix the yogurt, lemon juice, and olive oil for the dressing.
- Place the quinoa in a bowl and top with the salmon, mango, and herbs. Drizzle with the dressing just before serving.
