Turkey with quinoa and seasonal vegetables
__Ingredients__:
- Turkey filet 5 oz.
- Quinoa 1/4 cup
- Brussels sprouts 1 cup
- Carrots 1/2 cup
- Parsnips 1/2 cup
- Onions 1/4 cup
- Olive oil 2 tbsp.
- Lemon juice 1 tbsp.
- Salt, pepper to taste

- Protein: ~41 g
- Fat: ~14 g
- Carbs: ~50 g
- Calories: ~498 kcal
__Instructions__:
- Cut the turkey into cubes and season with salt, pepper, and lemon juice. Fry in 5 ml oil until golden (about 7 minutes).
- Boil the quinoa in salted water (ratio 1:2) until tender (about 15 minutes).
- Chop the vegetables and mix with the remaining oil, salt, and pepper. Bake in the oven at 200°C (400°F) for around 20 minutes.
- Serve the turkey with the quinoa and roasted vegetables.
