Bowl with roasted vegetables
__Ingredients__:
- Chicken 5 oz.
- Brown rice 1/4 cup
- Pumpkin 1/2 cup
- Beets 1/2 cup
- Green peas 1/4 cup
- Olive oil 2 tsp.
- Balsamic vinegar 1 tsp.
- Grainy mustard 1/2 tsp.
- Honey 1 tsp.
- Salt, pepper to taste

- Calories: ~507 kcal
__Instructions__:
- Cut the chicken into bite-sized pieces and season with salt and pepper. Pan fry until cooked through, or bake in the oven at 200°C (400°F) for around 20 minutes.
- Boil the brown rice in salted water (ratio 1:2) until tender (about 15 minutes).
- Defrost the peas or use fresh ones.
- Slice the pumpkin and beets and mix with 1 tsp olive oil, salt, and pepper. Bake in the oven at 200°C (400°F) for around 20 minutes.
- For the dressing, mix together the balsamic vinegar, remaining oil, mustard, and honey.
- Place the rice, chicken, green peas, and roasted vegetables in a bowl and drizzle with the dressing.
