Ricotta frittata
__Ingredients__:
- Egg 2 pcs
- Ricotta 1 tbsp.
- Savoy cabbage 1/2 cup
- Carrots 1/4 cup
- Leeks 1/4 cup
- Canned chickpeas 1/4 cup
- Olive oil 1 tbsp.
- Fresh parsley 1 tbsp.
- Salt, pepper to taste

- Fat: ~21 g

- Calories: ~460 kcal
__Instructions__:
- Preheat the oven to 180°C (350°F).
- Chop the vegetables and roast them with the chickpeas in a pan with olive oil for 3-4 minutes.
- Beat the eggs with the ricotta, adding salt and pepper. Mix with the roasted vegetables.
- Pour the mixture into a heatproof mold and bake for 15-20 minutes.
- Sprinkle with herbs before serving.
