Beef with sautéed vegetables and quinoa
__Ingredients__:
- Beef 5 oz.
- Quinoa 1/4 cup
- Broccoli 1 cup
- Carrots 1/3 cup
- Red onion 1/4 cup
- Olive oil 1 tsp.
- Soy sauce 2 tsp.
- Paprika to taste
- Pepper to taste

__Instructions__:
- Cut the beef into strips and fry in ½ tsp. of olive oil over a high heat until browned (around 5 minutes). Add the soy sauce and braise under a lid for 5-7 minutes.
- Chop the vegetables and stir-fry in the remaining oil until soft (8-10 minutes).
- Cook the quinoa in salted water according to the directions on the packaging.
- Mix the beef and vegetables and serve with a portion of quinoa.
